Oh profiteroles…Walk around Paris, and you’d be forgiven for thinking there are as many pastry shops and bakeries in the city as there are street corners. Cases and shelves of flaky and cream-filled sweets will tempt you at every turn. Profiteroles are probably my favorite AND they’re super easy to make at home!
Ingredients (makes about 18 small puffs)
1 cup of flour
1/4 teaspoon of salt
1 cup of water
8 tablespoons of unsalted butter
130g of dark chocolate (I use Lindt or Nestlé dessert)
1/3 cup of milk
2 tablespoons of heavy cream
1-Preheat the oven to 220°C.
2-In a small bowl, whisk together the flour and salt.
3-Place the water and butter in a medium saucepan and bring to a boil. Add the flour mixture and beat with a wooden spoon for several seconds, until the dough is smooth, pulls away from the sides of the pan, and starts forming a ball.
4-Remove the pan from the heat. Beat in the eggs one at a time, until smooth and glossy, 1 to 2 minutes.
5-Line baking trays with baking parchment. Using 2 tablespoons, form balls and place them onto the baking sheets.
6-Bake for 10 to 12 minutes, or until puffed up, golden brown, and firm to the touch. Cool completely on a wire rack.
7-Fill in with vanilla ice cream just before serving. Pour some hot melted chocolate over and add pistachio bits (optional)
